In 1852, Dr Pierre Charles François Harel developed the concept of local distillation of rum in Mauritius, using only the finest local ingredients from his vast Pamplemousses Garden Estate to create a liquor of outstanding quality and pure refinement. Having said this there are a number of constellation which can bee seen all year round in Mauritius as they never drop below the horizon. These are called circumpolar constellations.
Made from some of the finest sugar cane in the world, Pink Pigeon undergoes quadruple distillation with each time a new botanical being added to the mix. The bourbon Vanilla is considered to be the finest vanilla in the world. It grows wild in the rainforests of Reunion and Madagascar before being sundried and matured in the wooden cases for eight months and once fully matured it is infused with Pink Pigeons rum and rested for a further six months. This labour intensive process make the bourbon vanilla one of the most expensive spices in the world.

Pink Pigeon rum is produced in Mauritius at the Médine estate, which includes a rum distillery and a sugar factory, both separated by a few metres. The sugar factory supplies the distillery with sugar-rich molasses.
Most of the night skies wonders are visible only at certain periods of the year, as there is a long list and I am by no means an expert I will link the best astronomy tools below. One of the distillery’s strong points is that it was designed to provide a holistic tourism experience to guests. Mauritian architect Maurice Giraud has created a building that blends harmoniously with the spectacular surroundings. Rum history allegedly started in the Carribiens in the 17th century when they started to ferment and distill molasses, a byproduct of sugar production. Most of the Rum is aged in oak or ex-wine casks, giving its color and flavor. Located 20 minutes from Port Louis, Château de Labourdonnais was built between 1856 and 1859. Surrounded by beautiful orchards, this grand mansion was restored between 2006 and 2010 and converted into a museum that invites you to discover the nineteenth-century Mauritian lifestyle as well as its history. During your visit you will see, a grocery shop where a wide variety of fruits are sold to local buyers, supermarkets, and the transformation factory of Chateau de Labourdonnais, which results in finished products like jams, juices, and fruit candies/pastes.
As a result, Pink Pigeon Rum has a rich, golden color, along with an aroma of sweet vanilla, delicate spices and cloves. The aroma gives way to notes of soft citrus, vanilla, caramel and whipped cream, and leads to a smooth, semi-sweet finish. Pink pigeons are still dependent upon intensive management for their survival. Management measures still undertaken include supplementary feeding, the provision of nest boxes and the management of introduced predators such as rats. The pigeon was spotted by Greater Manchester Police in Bury town centre as they undertook Operation Heartbeat. What can I say, since arriving in Mauritius I have become a Rum fan. In fact, I've become somewhat of a rum collector!
